  • 2 zucchinis
  • 1 carrot, grated
  • 1 celery stalk, finely chopped
  • 1 head of broccoli, cut into small chunks
  • 1 onion, finely chopped
  • 2 cloves garlic, crushed
  • 1 tbsp tomato purée
  • 500g pasata
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 stock cube (beef or vegetable) made up into 150ml stock
  • Olive oil
  • Salt and pepper
  • A handful of fresh basil, chopped
  • Grated parmesan cheese (optional)

  Instructions Add a few glugs of olive oil to a large pan and heat up to a medium-high heat. Add the onions, garlic and celery to the pan and allow to sizzle for a minute or so while the flavours release into the oil. Then add the broccoli and carrot and cook until softened slightly. Now add the tomato purée, pasata, dried herbs, stock and seasoning. Allow to simmer for 20 minutes or so. Put a steaming pan on to heat for the spaghetti. While it’s heating up, spiralize the zucchini (if you don’t have a spiralizer, cut your zucchini into long thin spaghetti like strands) and steam for 30 seconds. When done, divide the spaghetti into two large bistro bowls, spoon over the bolognese sauce and garnish with the fresh basil and some parmesan cheese. Enjoy!
