  • 3-4 turnips
  • 1 large sweet potato
  • 1 large red onion
  • 2 cups of salad mix
  • 1 avocado
  • 1 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • Large pinch of thyme
  • Salt
  • Pepper
  Instructions Preheat your oven to 220 degrees. Peel the turnips and sweet potato and cut into small chunks. Peel the red onion and cut into six moon shaped segments. Place the veg into a large roasting dish. Mix together the olive oil, balsamic and thyme and pour over the soon to be roasted veg. Season well and give the veg mix a good stir to make sure it’s all evenly covered. Pop into the oven and roast for about 30 minutes, stirring half way. While the veg is roasting, wash the salad mix and place into a large salad bowl. Peel and stone the avocado, cut into chunks and add the salad bowl. When the roasted veg is crisped and browned, remove from the oven and allow it to cool slightly. After 5 minutes or so, add the roasted veg to the salad bowl, toss well and finish with an extra drizzle of oil and balsamic to taste. Enjoy! Roasted turnip and sweet potato salad  shopping list
