Ingredients
·       2 capsicums ·       1 brown onion ·       olive oil ·      1 sweet potato ·       1 head of broccoli ·       4 eggs ·       a handful of rocket ·       diced shallots for garnish ·       salt and pepper ·      grated mozzarella cheese
Instructions
First, preheat the oven to 200 degrees. Line a baking pan and cut the capsicum in half, removing the seeds and ribs. Drizzle with olive oil and salt and pepper and place the capsicum cut side down on the pan. Cook for 20 minutes until soft.   While the capsicums are cooking, prepare the filling. Dice the onion, broccoli, and sweet potato into very small pieces and in a medium pan, sauté in olive oil. Cook until soft and then add the handful of rocket. Remove from heat.   Then stuff the peppers with the filling and place back on the pan cut side up. In each capsicum, crack and egg and sprinkle the mozzarella cheese on top. Bake for another 15 minutes, until the eggs are cooked. Sprinkle with some more pepper and shallots. Enjoy!
